FRENCH BAKED PANCAKE

Serves 8 9

CUP BUTTER
4 TABLESPOONS SUGAR
3 EGGS
1 CUP MILK
2 CUPS FLOUR
1 TEASPOONS BAKING POWDER

FILLING

1 POUNDS 24 OZ COTTAGE CHEESE
2 EGGS
3 TABLESPOONS BUTTER MELTED
1 TEASPOON SALT


Serves 10 - 12

CUP BUTTER
6 TABLESPOONS SUGAR
5 EGGS
2 CUPS MILK
3 CUPS FLOUR
2 TEASPOONS BAKING POWDER

FILLING

1 POUNDS 24 OZ COTTAGE CHEESE
3 EGGS
3 TABLESPOONS BUTTER MELTED
1 TEASPOON SALT



Blueberry Sauce: - mix 1 can blueberry pie filling with 1 bottle blueberry syrup.

Sour Cream Sauce - Mix sour cream, vanilla, powdered sugar and orange rind to taste.

In a large bowl cream butter and sugar. Then beat in eggs
Mix in milk alternately with flour and baking powder
Place half the batter in a well-greased 9 by 13 inch pan
For Filling: Mix cottage cheese, eggs, butter and salt. Spread over batter in pan.
Top filling with the remaining batter
Bake in a preheated oven at 350 degrees for 45 60 minutes or until golden brown

Serve with Blueberry sauce and a dollop of sour cream mixture.


Better Blueberry Sauce: Mix 1 cup sugar with one Tablespoon cornstarch. Stir and add 1/2 cup of water. Cook until thick and clear. Add approx 2 or 3 cups fresh or frozen blueberries and cook until mixture becomes clear again. Add a couple of tablespoons of butter. (This is really a better sauce than the one above, but more trouble to make.)
